Cheeseburger with Chipotle Barbecue Ailoi and Sauteed Mushrooms Recipe

A cheeseburger is just a cheeseburger unless you smother it in Chipotle Barbecue Ailoi and top it with sauteed mushrooms- then and only then is it called the Ultimate Cheeseburger! The aoili is sweet and smokey and works perfectly against the rich bold flavor of the mushrooms. Try this one at home for a simple and yet flavorful twist on the traditional burger.

Cheeseburger with Chipotle Barbecue Ailoi and Sauteed Mushrooms
  • For the burger:
  • 6 E3 80/20 ground beef patties
  • Hamburger Buns
  • *optional toppings: cheese, lettuce, onion, tomato
  • For the Aioli:
  • 3 tsp minced chipotle peppers in adobo sauce
  • 2 tsp adobo sauce
  • 1/4 cup barbecue sauce
  • 1 tsp horseradish
  • 1/4 cup mayonnaise
  • dash of salt
  • For the Sauteed Mushrooms:
  • 1 lb of sliced button mushrooms
  • 2 tsp extra virgin olive oil
  • 2 tablespoons of butter
  • 2 cloves of garlic, minced
  • 1 tsp balsamic vinegar
  • 3 tsp Worcestershire sauce
  • 1/2 tsp salt and pepper each
  1. To make the Aioli:
  2. Combine all the ingredients in a small food processor or blender. Blend until smooth.
  3. To make the sauteed mushrooms:
  4. Heat oil and butter in a large saucepan or skillet over medium heat. Stir in the remaining ingredients and cook until the mushrooms are browned and tender, approximately 7 minutes. Reduce heat, cover and simmer an additional 5 minutes.
  5. To cook the burger:
  6. Preheat a cast-iron skillet over high heat or light up the grill. Cook the E3 burger patties until the bottoms are seared, 3-5 minutes. Flip and cook another 5 minutes.
  7. Brush the buns with melted butter and toast under the broiler for 1 minute or on the grill. Place the burger on the bottom bun and immediately top with the cheese for it to melt. Place the sauteed mushrooms on top and then drizzle with the ailoi.Use your favorite toppings to finish it off and enjoy!
