Coffee Crusted Steak
  • 4 tbsp dark Chicory roasted coffee grounds
  • 1 tbsp ground garlic
  • 2 1/2 tbsp brown sugar
  • 1 tbsp freshly ground black pepper
  • 1 tsp ground ginger
  • 1 tbsp sea salt
  • 1 tbsp smoked paprika
  • 1 tbsp chile powder
  • 1 tbsp red pepper flakes
  • 2-3 tablespoons of butter, unsalted
  1. Season steaks with the spice rub, pressing onto all sides of meat to make sure the rub stays put and coating every side using more rub as needed.
  2. Heat 2 tablespoons oil over high heat in a large cast-iron skillet. Place one or two steaks at a time in the skillet, depending on the size of your skillet. You do not want to overcrowd the pan. Note: the rub will create smoke. Sear steak for 1 minute (any longer and the rub will start to burn).
  3. Top the steaks with butter and sprinkle with sea salt. Transfer the skillet to the oven. Cook at 400 degrees until the internal temperature of the meat reaches 125° for medium. Allow the steaks to rest for 10 minutes before cutting in them.
