Creamed Spinach Recipe

This lightened version of a classic steakhouse side dish delivers a ton of flavor without all the guilt. It is easier and quicker than the traditional creamed spinach recipe but is still rich and satisfying thanks to the right selection of cheese and spices.

  • 1/2 cup chopped onion
  • 1 TBSP chopped shallots
  • 2 cloves garlic, minced
  • 4 ounces of fat free cream cheese
  • 2 TBSP butter
  • 1/4 cup fat-free milk
  • 1/2 tsp. nutmeg
  • 1/2 tsp red pepper flakes
  • 1/4 tsp salt
  • 16-oz. bag frozen chopped spinach, thawed and patted dry
  1. Melt the butter in a dutch oven or large non-stick skillet. Add in the garlic, shallots and onion. Saute until softened and brown. Reduce heat and stir in the cream cheese. Cook until melted and then pour in the milk and seasonings. Once combined, stir in the spinach until coated. Cover and cook for 30 minutes on low. Serve warm and top with sliced almonds.

The only way you will want to eat spinach again!
