E3 Grilled Filet Mignon with Baked Garlic Lobster Tail Recipe

E3 Grilled Filet Mignon with Baked Garlic Lobster Tail Recipe
Ingredients
  • For the Filet:
  • 1/2 tsp ground thyme
  • 1/2 tsp ground oregano
  • 1/2 tsp salt and pepper each
  • 1 tsp minced garlic
  • 2 tbsp canola oil
  • 2 Large E3 Filet Mignons
  • For the Lobster Tail:
  • 2 6-8 oz. lobster tails, split in half down the center
  • 2 cloves garlic, minced
  • 1 tsp crushed garlic
  • 2 tbsp butter, melted
  • 2 tbsp olive oil
  • 1 lemon, cut in half, ready to be squeezed
  • 2 tsp salt plus 1/2 tsp salt and 1/2 tsp pepper for seasoning
  • 2 tbsp chopped parsley or basil
Instructions
  1. Preheat oven to 475 degrees. In a large pot fitted with a steamer basket, add just enough water so that the water is just below the steamer basket. Season the water with 2 tsp of salt. Cover and bring to a boil. Once the water has reached a boil, carefully add the lobster tails into the steamer basket. Steam for 5 minutes and remove the lobster to a roasting pan.
  2. Mix together the melted butter, olive oil, garlic lemon juice and salt and pepper. Brush the lobster tails in the butter garlic mixture. Roast in the oven for 5-7 minutes. Garnish with chopped parsley or basil and serve with grilled filet.
  3. For the Filet:
  4. Combine the oil with the thyme, oregano, minced garlic, salt and pepper. Rub the mixture into the Filets. Cook the steaks over indirect heat until a meat thermometer reads 15 degrees less than your desired temperature. Move the steaks over to direct heat and sear for 2 minutes per side or until the internal temperature reads 110° to 115° F for medium-rare. Serve with lobster tail and top with Bearnaise sauce.
