  • 1 lb E3 natural ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 TBSP butter
  • 1 TBSP flour
  • 1 pound cremini mushrooms, thinly sliced
  • ½ tsp minced garlic
  • 1 tsp salt
  • 1/2 tsp thyme
  • 3/4 tsp oregano
  • 1 tsp cracked black pepper
  • 1 tsp red pepper flakes
  • 1/2 cup heavy cream
  • 1 tablespoon tomato paste
  • 1/2 cups shredded cheese
  • 2 cups beef broth
  • 1 cup water
  • 10 ounces egg noodles ( or your choice of pasta)
  • 1/4 cup ricotta cheese
  • 1 tsp Dijon mustard
  1. To a large pot add beef, onion and garlic. Cook over medium high heat until beef is being to turn brown but not cooked through. Add in the mushrooms and cook for another 5-10 minutes until beef is cooked completely. Add in the butter and allow to melt. Toss in the flour and stir to coat. Slowly pour in the heavy cream, stirring until a sauce is formed. Spoon in the tomato paste and seasonings. Slowly add in the broth, water then noodles. Bring to a boil then reduce heat to medium and cook 12-15 minutes, stirring often. Stir in 1/2 cup of cheddar cheese, ricotta cheese and mustard. Serve immediately, garnish with more cheese or freshly chopped herbs, if desired.
