Spicy Whole Roasted Cauliflower Recipe

An entire head of cauliflower roasted with greek yogurt, lime juice, mustard and a handful of spices turns an ordinary vegetable into something extraordinary! Roasting a whole head of cauliflower is just as easy as roasting individual florets and its even more delicious. The spices for this dish resemble those usually found in Indian cuisine but it can be dressed up a number of ways based on individual preferences. A hearty and filling side dish that goes nicely with a cut of meat.

Spicy Whole Roasted Cauliflower

  • 1 head cauliflower
  • 1 tbsp canola oil
  • 1½ cups plain Greek yogurt
  • 2 tsp honey
  • 1 lime, juiced
  • 1 tbsp chili powder
  • 1 tbsp paprika
  • 1 tbsp cumin
  • 1 tbsp garlic powder
  • 1 tsp curry powder
  • 1 1/2 tsp kosher salt
  • 1 tsp black pepper
  1. Preheat the oven to 400° and lightly grease a small baking sheet with vegetable oil. Set aside.
  2. Trim the base of the cauliflower. In a medium bowl, combine the yogurt with the lime zest and juice, honey, chili powder, paprika, cumin, garlic powder, curry powder, salt and pepper. Dunk the cauliflower into the bowl and use your hands to smear the marinade evenly over its surface.
  3. Place the cauliflower on the prepared baking sheet and roast until the surface is dry and lightly browned, 30 to 40 minutes. The marinade will make a crust on the surface of the cauliflower.
  4. Let the cauliflower cool for 10 minutes before cutting it into wedges
