Taco Soup Recipe

Taco soup is a great way to enjoy Mexican inspired flavors without all the fuss. Beef, beans, corn, tomatoes, seasonings and stock make this taco soup perfect for quick dinners. It is fast and filling and a dinner your family will request over and over again.

Taco Soup
Ingredients
  • 2 lbs E3 natural ground beef
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 tbsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp oregano
  • 1/2 tsp red pepper flakes
  • 1 1/2 tsp cumin
  • 1 tsp salt and pepper each
  • 1 can (16 ounces) black beans, undrained
  • 1 can (15-1/4 ounces) whole kernel corn, undrained
  • 1 can (15 ounces) pinto beans, rinsed and undrained
  • 1 can (14-1/2 ounces) roasted diced tomatoes
  • 1 can (4 ounces) chopped green chilies, optional
  • 2 tbsp chopped cilantro
  • 1/2 cup green or red enchilada sauce
Instructions
  1. In a Dutch oven, cook beef, garlic and onion over medium heat until no longer pink; drain. Add in the seasonings and mix well. Stir in the remaining ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes.
