Three Cheese Skillet Lasagna
Ingredients
  • 1 lb. E3 natural ground beef
  • 4 garlic cloves, minced
  • 1 jar store-bought marinara sauce
  • 3 tbsp chopped fresh basil and/or parsley
  • 1 tsp oregano
  • 1 tsp thyme
  • 1 tsp sea salt and cracked black pepper each
  • 10 ounces of ricotta cheese
  • 1 egg, slightly beaten
  • 1/2 cup grated parmesan cheese
  • 12 sheets no-bake lasagna noodles
  • 16 ounces shredded mozzarella cheese
Instructions
  1. Mix the ricotta, beaten egg, 1/4 cup of the Parmesan, herbs, 1/2 tsp salt, oregano, thyme and 1/2 tsp pepper in a bowl. Set aside.
  2. Cook the ground beef in the cast iron skillet with the onions, 1/2 tsp salt and pepper, garlic and shallots over medium to high heat until the meat is browned and cooked through. Remove and transfer the meat to a large mixing bowl. Set aside.
  3. Pour 1/8 cup of the marinara sauce in the bottom of the same cast iron skillet you used to cook the meat. Spread out in an even layer. Top with 4 lasagna noodles. Arrange as best you can and use less or more noodles depending on the size of your skillet. There will be some extra space leftover on the sides. Top with a few large heaping spoonfuls of the ricotta cheese mixture and spread out as evenly as you can. Cover with half of the meat mixture. Top with a few handfuls of mozzarella cheese. Repeat with the sauce then noodles, ricotta cheese mixture then meat, mozzarella cheese. For the last layer top the mozzarella cheese with another layer of noodles then sauce and another layer of mozzarella cheese. Sprinkle remaining Parmesan cheese and additional parsley on top.
  4. Cover and simmer on the stove until the lasagna is cooked and the cheese melts, 20 to 25 minutes. Alternatively, you can cover the lasagna and bake it in the oven at 375 for 30 minutes until the cheese is golden brown and bubbly on top. Let rest before slicing.
